''I say recipe because the man just made things up and never wrote it down. So this is mom's 'best guess' for how it works''
==Ingredients==
* 1 lb spinach
* 1/2 cup water
* 1 tsp flour
* 1 tsp salt (or chicken bouillon)
* onion
* garlic
* potatoes (peeled, boiled, and quartered)

==Directions==
# Boil spinach. Drain and reserve the liquid
# Saute 1 large chopped onion in olive oil
# mix flour and salt with onion. Stir constantly
# slowly add spinach water until creamy
# pour spinach in and use a hand mixer to cream them together
# serve over potatoes
