Ingredients
- 1-1.5lbs of salmon, chunked
- 2 large leeks, washed and sliced thin
- 2 medium sized carrots, diced
- 2-3 stalks of celery, diced
- 1.5lbs potatoes, cubed
- 6 cups broth (vegetable, fish, or chicken)
- large bunch of dill, chopped
- 8 oz sour cream OR heavy cream
- 2-3 tbs olive oil
- salt to taste
Directions
- In a soup pot heat olive oil and saute leeks, celery, and carrots together until somewhat softened
- Add potatoes and broth. Simmer until the potatoes are almost entirely cooked
- Stir in sour cream and dill
- Add salmon, and simmer until cooked through
- Add salt to taste
Notes
- You can substitute other fish, I've made this with frozen haddock and it came out just as good
- Substitute or omit the sour cream / heavy cream as you like
- For potatoes, I prefer the small creamer potatoes but any will do
- Different broths have different seasonings, taste before you add salt
