Ingredients

Filling

  • Olive oil
  • 1lb ground beef
  • 2 tsp parsley
  • 2 tsp rosemary
  • 1 tps thyme
  • salt and pepper
  • Garlic
  • 2 tbsp flour
  • 2 tbsp tomato paste
  • 1 cup beef broth
  • 1 cup mixed frozen peas & carrots
  • 1/2 cup frozen corn

Topping

  • 1.5-2lbs potatoes (peeled and cubed)
  • 8 tbsp unsalted butter
  • 1/3 cup half & half
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tps black pepper
  • 1/4 cup parmesan cheese (optional)

Directions

Topping

  1. Boil the potatoes until soft
  2. Drain and let rest to evaporate any remaining liquid
  3. add butter, half & half, garlic powder, salt, pepper, and mash
    • If adding cheese, add at this step and stir to combine

Filling

  1. Add oil to a large skillet and heat.
  2. Sautee onions for about 5 minutes
  3. Add ground beef and break apart.
  4. Add parsley, rosemary, thyme, salt, and pepper. Stir, and cook until meat is browned
  5. Add garlic and cook for an additional minute
  6. Add flour and tomato paste. Stir until well incorporated and no clumps remain
  7. Add broth & frozen veggies. Bring to a boil and then reduce to a simmer for 5ish minutes

Assembly

  1. Pour the meat mixture into a 9x9 baking dish, spread into an even layer
  2. Spoon potatoes on top and spread evenly
  3. Bake uncovered 25-30 minutes
