Carrot Cake

Ingredients
- 2/3 cups flour
- 1/2 cup white sugar
- 1 tsp baking soda
- 3/4 tsp baking powder
- 1 tsp ground cinnamon
- 1/4 tsp ground cloves
- 1/4 tsp ground nutmeg
- 1/4 tsp ground allspice
- 1/3 cup vegetable oil
- 2 eggs
- 1 cup chopped walnuts [optional]
- 1/2 cup raisins [optional]
- 1 cup finely grated carrot
Directions
- Preheat oven to 350 degrees
- Butter or spray the sides of a baking dish (an 8" round spring-form pan or a 9x9 baking dish works well)
- mix all dry ingredients in a large bowl.
- add eggs & oil and mix
- fold in carrots until just mixed
- Bake 40-45 minutes and then test with a toothpick, if it comes out clean its done
Goes best with Cream Cheese Frosting
