Ingredients
- 1 lb Italian sausage, casing removed
- 1 onion, diced small
- Garlic, minced (measure with your heart)
- 6 cups broth (veggie, chicken)
- 1 14.5oz can petite diced tomatoes
- 1 cup sour cream OR heavy cream
- 2 large handfuls spinach, rinsed
- 1 lb potatoes, cubed
- Parmesan cheese (SHAVED, not shredded)
- Optional: Corn starch
Directions
- In a soup pot heat olive oil cook sausage until browned, breaking it into chunks
- Add chopped onion and minced garlic, cook until the onion is translucent
- Add potatoes, tomatoes, and broth. Simmer until potatoes are cooked
- Stir in sour cream and cheese, simmer about 5 minutes, stirring until cheese has melted and incorporated
- Add spinach and stir until wilted
- OPTIONAL: for thicker soup, add a tbsp of corn starch mixed with water
