a.k.a Tom Ka Gai
Ingredients
- 3/4 pound boneless skinless chicken meat
- 3 tbsp vegetable oil
- 2 (14 oz) cans coconut milk
- 2 cups water
- 2 tbsp minced fresh ginger root
- 4 tbsp fish sauce
- 1/4 cup fresh lime juice
- 1/4 tbsp cayenne pepper
- 1/2 tsp ground tumeric
- 2 tbsp thinly sliced green onion
- 1 tbsp chopped fresh cilantro
Directions
- Cut chicken into thin strips and sauté in oil for 2-3 minutes until the chicken turns white
- In a soup pot bring coconut milk and water to a boil, reduce heat
- Add the chicken, ginger, fish sauce, lime juice, cayenne powder, and turmeric
- Simmer until chicken is totally cooked (about 10-15 minutes)
- Sprinkle with scallions and fresh cilantro
Serve hot.
