This originally comes from mom. Its really Corn, potato, and bacon chowder...but I wont tell if you don't. Also I may have tweaked it a bit from her recipe
Ingredients
- 1 lb bacon
- 1 onion, chopped
- 1 lb potatoes, peeled and cubed
- water
- 2 (15oz cans) cream-style corn
- 2 (15 oz cans) whole kernel corn
- salt and pepper to taste
Directions
- cook bacon in a pan and set aside. reserve as much of the drippings as you like (at least 2 tbsp)
- sauté the onion in bacon drippings until tender
- add potatoes and water and simmer 15-20 minutes until potatoes are tender
- Stir in milk, corn, salt, and pepper. Cook until heated through
- Add bacon and serve
Notes
- Sometimes I get lazy and cut the bacon beforehand and leave it in during the cooking process. It tastes like bacon but looks more like ham pieces if you do this, either way works.
