Grampie's "recipe"
I say recipe because the man just made things up and never wrote it down. So this is mom's 'best guess' for how it works
Ingredients
- 1 lb spinach
- 1/2 cup water
- 1 tsp flour
- 1 tsp salt (or chicken bouillon)
- onion
- garlic
- potatoes (peeled, boiled, and quartered)
Directions
- Boil spinach. Drain and reserve the liquid
- Saute 1 large chopped onion in olive oil
- mix flour and salt with onion. Stir constantly
- slowly add spinach water until creamy
- pour spinach in and use a hand mixer to cream them together
- serve over potatoes
