==Ingredients==
* 3/4 pound boneless skinless chicken meat
* 3 tbsp vegetable oil
* 2 (14 oz) cans coconut milk
* 2 cups water
* 2 tbsp minced fresh ginger root
* 4 tbsp fish sauce
* 1/4 cup fresh lime juice
* 1/4 tbsp cayenne pepper
* 1/2 tsp ground tumeric
* 2 tbsp thinly sliced green onion
* 1 tbsp chopped fresh cilantro

==Directions==
# Cut chicken into thin strips and sauté in oil for 2-3 minutes until the chicken turns white
# In a soup pot bring coconut milk and water to a boil, reduce heat
# Add the chicken, ginger, fish sauce, lime juice, cayenne powder, and turmeric
# Simmer until chicken is totally cooked (about 10-15 minutes)
# Sprinkle with scallions and fresh cilantro
Serve hot.
